The countries of Spain and Portugal have produced cuisines that have influenced the New World since the Age of Exploration. Due to its key roles in the expansion westward and its strategic geographic location, this region of the world has greatly had their cuisine expanded too and enhanced by the rest of the continents. This class will explore the Iberian Peninsula’s foods, techniques and traditional dishes. Spanish and Portuguese regional fare are gateways to Western World’s food culture.
